Characteristics of the live animal related to the grades of quality and yield of the carcass of feedlot steer

The carcass quality in beef production is determined by man agement conditions and characteristics of the live animal. The aim of this study was to evaluate the effect of the some char acteristics of live animal on the carcass of young steer’s crosses Bos taurus x Bos taurus and Bostaurus x Bos indicus ones. A comparison of characteristics: slaughter weight, hip height, daily weight gain and breed on live animals with the vari ables: quality and yield grades (subcutaneous fat, kidney, pelvic and heart fat, hot carcass weight, longissimus dorsi muscle). Data collected from 1991 to 2009 of young steers and their carcasses was used. A completely randomized design with factorial arrangement, where the year was combined sepa rately with the characteristics of the live animal was used. It was found an increase (p=0.05) in variables of quality and carcass yield, caused by an increase in slaughter weight, daily gain weight and height at the hip, but the longissimus dorsi muscle area per 100 kg of hot carcass weight was decreased. All the variables of carcass quality were higher for steers from crossing Bos taurus x Bos taurus than Bos taurus x Bos indicus one. There was no difference (p>0.05) for the degree of effi ciency in steers of different crosses. It is concluded that slaugh tered steers with more weight, greater height at the hip, that gained more weight during the fattening and crosses Bos taurus x Bos taurus produce higher quality of carcass and lower cut yield.
