Vida útil de frutas y verduras: pérdidas poscosecha y alternativas de envasado sostenibles

El desperdicio de frutas y verduras es una problemática latente a nivel mundial, se calcula que alrededor del 50 % de los productos hortofrutícolas pierden su calidad durante su cosecha, almacenamiento y transporte. Esta situación trae consigo grandes desafíos sociales, ya que la pérdida de alimentos agudiza la situación de miles de personas que padecen hambre, desnutrición o no tienen acceso seguro a una alimentación adecuada. La corta vida útil de estos productos está estrechamente vinculada a tres factores principales: la producción de etileno, la pérdida de agua y el crecimiento microbiano. Como alternativa, tradicionalmente se apostó por el uso de empaques sintéticos para su conservación, sin embargo, estos generan microplásticos y afectan la biodiversidad de muchos ecosistemas cuando no son reciclados. Ante este panorama, surge la necesidad de desarrollar nuevos materiales más ecológicos y funcionales que permitan a los alimentos conservar su frescura durante más tiempo. En la actualidad se innova en el campo de los biopolímeros derivados de subproductos agrícolas y desechos del procesamiento industrial de alimentos, ya que estos constituyen un recurso renovable y biodegradable, y presentan propiedades bioactivas y formadoras de película que los convierten en alternativas prometedoras, alineados con los modelos de economía circular y las políticas de cero desperdicios que se pretenden implantar a nivel mundial.
